comfort food


Some days just call for the most delicious breakfast foods ever. If you are anything like me, breakfast food is the best comfort food and you might like making one of my favorite things: the dutch baby pancake. What is so awesome about this food is that it is SO easy to make and super yummy. Also, depending on how you top it it can also be pretty healthy (although probably not the way I eat it).

So, even if you have no baking skills whatsoever, you can easily master this amazing pancake. Here is all you have to do. Preheat the oven to 400 degrees. Take a glass pie plate/pan and put a healthy size pad of butter in there (about 1-2 Tablespoons) and place in the oven until the butter is melted. Meanwhile, mix the following ingredients: 3 eggs, 1/2 C flour (mix these first with a fork or whisk) and then add 1/2 C milk and a dash of salt, nutmeg and cinnamon (feel free to add grated lemon peel, orange or 1 t. vanilla- optional). Pour mixture into the pie plate with melted butter and bake for 20 minutes. It should puff up on top and will quickly fall once removed from the oven. Top with any of the following: traditional maple syrup, crumbled bacon & feta, jam, peanut butter, or my favorite: a healthy amount of powdered sugar and fresh squeezed lemon juice and enjoy.

The only hard part is waiting the 20 minutes once you put it in the oven. Serve with a fresh cup of coffee to really enjoy!
